Red Sauce Pasta - My version

Pasta is my daughter's favourite food. She can eat it for break fast, lunch, dinner, evening snack, mid night snack and she is okay to have it for the next day too! As she has been requesting for few months, yesterday I made pasta. It was her pasta marathon for the whole day! This recipe is for her friends too who love red sauce pasta..

Red Sauce Pasta (coriander leaves only for garnish)

 Ingredients:

  • Pasta - 300 grams 
  • Tomatoes - 6 (medium size)
  • Onion - 1 (big)
  • Garlic - 4 cloves
  • Chilli powder - 1/2 teaspoon
  • Turmeric - 1/4 teaspoon
  • Pepper powder - 1/2 teaspoon
  • Ketchup - 1 table spoon
  • Sugar - 1/2 teaspoon
  • Pasta spice - 2 teaspoons
  • Salt (rock salt) - as required
Pasta sauce

Procedure:

  • Blanch* the tomatoes. Peel the skin and puree the tomatoes.
  • Take a big container and boil enough water to cook pasta. When the water boils, add salt. 
  • Add the pasta to the rolling boiling water. Follow the pack instructions to cook the pasta.
  • The pasta should be firm but still cooked.
  • When the pasta is ready, drain the water and keep it aside.
  • In the mean while, finely chop the onion and garlic.
  • Heat oil in another pan, add the garlic and then followed by onion. Saute well with a pinch of salt to fasten the sauteing. 
  • Now add the tomato puree. 
  • Add the chilli powder (instead you can add chilli flakes too), turmeric powder, salt, sugar ketchup and the pasta spice. Let it simmer for 5 minutes. 
  • The sauce will be thickened by now. The whole house will be filled with the aroma of the pasta spice. 
  • Check for salt. (You can stop here if you just want pasta sauce. You can prepare this and store it in fridge. This can be stored in fridge for 2 days.)
  • Add the boiled pasta to this tomato pasta sauce. Stir well. Add pepper powder and mix well. 
  • Pasta is ready now. Serve it piping hot.

Tips:

  • Do not add oil while boiling the pasta in water, as this might give a oil coating on pasta and that will prevent the sticking of the sauce to the pasta.
  • If you like olive oil flavour, you can drizzle some olive oil on the pasta just 1 minute before turning off the stove. 
  • I don't add coriander leaves as this might dominate the pasta spice and will give Indian touch to the pasta.
  • Pick nice ripe tomatoes. I would prefer our local country tomatoes (naattu thakkaali). This will give nice sour and sweet taste to the sauce.
  • The brand of pasta which I used here is Bambino Premier penne pasta. And the pasta spice is Snapin Pasta Mix.
  • Sometimes I used to save the spice mix and chilli flakes sachets which they give along with the pizzas. These spices can also be used instead of the spice mixes and chilli powder.
  • You can add blanched broccoli, olives, corn etc.,

*Blanch: Boil adequate amount of water to boil 6 tomatoes. Add the tomatoes in the boiling water. Let it boil for 5 minutes. The outer skin of tomato will crack open by now. Remove it from water. Let it cool. Peel the tomato, put in a blender and puree it.
