Rava Laddu
Rava laddu is one of the most simple sweet item in the Indian cuisine. Most of us would make rava laddu for any Festival as its recipe is simple.
Before I started to cook, I never respected rava laddu.. I never had any concerns for rava laddu untill one of my friend in US gave me her rava laddu for her son's birthday. I had a bite of the laddu, and just stopped to sense the unique flavour..
in it which was awesome. I was wondering how rava laddu can possess such an awesome flavour after all it is rava and sugar. Then I realised that the flavour was because of lots of saffron she had added in it. The simple rava laddu has gone to another level. From that day on wards.. I respect rava laddu and I also realised that I had not eaten a good rava laddu till then.

Then, after few years, in Chennai, another friend of mine, P, shared her version of rava laddu.. and it was another 'wow' laddu.. it seems she had added few pinches cinnamon powder. OMG! this is also nice!
Today, I am making a simple and basic version of rava laddu. You can now play with the spices in it to suit your taste buds.

Ingredients:
- Rava - 2 cups
- Sugar - 1 cup
- Cardamom powder - from 5 pods
- Ghee - 3 - 4 tablespoon
- MIlk - few teaspoons (optional)
- Cashews and raisins
Procedure:
- Roast the nuts and raising in 1 teaspoon of ghee and keep aside.
- Dry roast the rava and let it to cool.
- Once cooled, run it in the mixer and make powder of it and transfer it to a bowl.
- Powder the sugar too in a mixer.
- Now, take both the rava powder and the sugar powder in the mixer and run again to blend it well.
- Slightly melt the ghee and pour little by little on the rava-sugar mixture.
- Add the cardamom powder, roasted dry fruits and nuts too to the rava-sugar mix.
- Mix everything well.
- If you feel that it is lot of ghee, then add half the ghee and sprinkle some warm milk to mix and bring together the rava-sugar mix.
- Now, try to make laddus in that mix. If you think its too dry, then sprinkle few spoons of milk and try making laddus again.
Tips:
- If you make laddus without milk, it will stay good for almost a week. If you use milk to make laddus, then better store it in fridge.
- You can try adding saffron or cinnamon powder or clove powder or few tablespoons of desiccated coconut along with rava, and try different versions of rava laddu.
- If you are making a large batch, then give the roasted rava in a flour mill to make powder. you can make the sugar powder alone at home.
