Pesarattu - Andhra Pesarattu
Pesarattu is type of dosa in Andhra which doesn't need fermentation. Pesarattu made with green moong dhal, has a subtle flavour of ginger and cumin seeds which makes it an unique dosa. The beautiful light green colour dosa with nice brown edges like laces, lavish sprinkle of finely chopped onions and simple coconut chutney - healthy and interesting combo.
Stuff this pesarattu with elegant upma, fold it and serve it with coconut chutney - This is what you call Andhra famous MLA pesarattu or Upma pesarattu.
Pesaratu recipe is very simple and easy to make dish. Like our Tamilian adai.. pesarattu needs the dhal and rice to be soaked over night or atleast 8 hours. Morning you grind the batter with few more ingredients and make pesarattu right away.
Let us go to the recipe.
Ingredients:
- Whole green moon dhal - 1 cup
- Raw rice - 1/2 cup
- Ginger - 2 inch piece
- Green chillies - 2
- Cumin seeds - 1 teaspoon
- Onion - 1 small
- Salt - as required

Procedure:
- Wash and soak the dhal and rice over night.
- The next day morning, grind this dhal and rice alone with the green chillies, cumin seeds, onion and ginger to a not-very-smooth batter.
- Add salt. Mix well.
- Take the batter and pour it on hot tawa and cook like dosai / adai.
Andhra special pesarattu is ready to be served. Serve this pesarattu with lavish sprinkle of finely chopped onions and coconut chutney or mint chutney.
