Bisi Bele Bhath - Easy (Pressure Cooker) Method

Not always we need make the traditional food to feel good. This pressure cooker method of bisi bele bhath is one such saviour. Is it not a boon to have such a dish with easy recipe yet good to eat?
Mostly I make the spice powder just before making the rice. Sometimes, I make it the previous night. You can make this rice with just onion and tomato for a quick hot dinner. If you are in a good mood to play an orchestra in your kitchen, then go ahead and add more varieties of veggies (green beans, carrot, peas, soaked peanuts, drumstick, mochai kai etc,). Ingredients:
- Raw rice - 1/2 cup
- Thoor dhall - 1/2 cup
- Bisi Bele Bhath Powder - 4 teaspoons
- Turmeric powder - 1/2 teaspoon
- Sambar (small) onions - 15
- Tomato - 1 medium size
- Green beans - 10-15 nos.
- Carrot - 1 medium
- Tamarind water - 1 cup (extracted from one lemon size tamarind)
- Jaggery - small piece
- Salt - as required
- Water - 3 cups
Tempering ingredients:
- Mustard - 1/2 teaspoon
- Curry leaves - 1 sprig
- Asafoetida - 2 pinches
Final touch:
- Cashews - 1 tablespoon
- Ghee - 1 + 1 tablespoon
Procedure:
- Wash the rice and dhal and soak it together for at least for 30 minutes.
- Cut the vegetables and keep ready.
- After 30 minutes, take a pressure cooker add the rice/dhal, water, onion (since I did not have small onions, I have used regular big onions), tomato, beans and carrot, salt, turmeric powder and bisi bele bhath spice powder. (At this stage, you can add more vegetables or more chilli powder and coriander powder if you need more spice.)
- I prefer to add 1 teaspoon of ghee at this time.
- Close the cooker and keep it on stove. Let the pressure be released. Put the weight on cooker. Reduce the stove to low, cook for 15 minutes.
- In the mean while, add the jaggery to the tamarind water and boil for 4 minutes (to eliminate the raw smell).
- Once the rice is cooked, open the cooker and add the boiled tamarind/jaggery water. Mix well. Keep on medium heat again for 8 minutes.
- Do the tempering with given tempering ingredients and add to the rice.
- Roast some cashews in 1 table spoon ghee and top it on the rice which is waiting to be served.
- Add another table spoon of ghee to give that extra richness to the hot bisibelebhath. Mix well. Serve hot.
How about having this steaming-hot-awesome-flavourful bisibelebhath for some nice Saturday afternoon lunch when all your family members are at home or for some rainy-night dinner.
If this rice happens to be perfect as a result of perfect spice powder.. it doesn't need any side dish. Enjoy! Feast !
