Paneer Butter Masala - Creamy Buttery Paneer Masala
This recipe is an inspiration from the vah Chef. His recipes are easy and gives restaurant taste.
This recipe has long list of ingredients but easy recipe. I make this paneer butter masalas as a side dish for light pulavs like kashmiri pulav and peas pulav or chapathi or roti. Make the right choice of paneer as you need - nice, soft and milky panners and not any chewy paneers. It is better to make the paneer at home too. I make this paneer dish on special occasions as it elevates the mood for celebration.
I prefer not to add any artificial colours to the dish to enhance the presentation as it is for our beloved ones we are serving and they definitely do not deserve anything other than the best ingredients in their food. I bet you this recipe taste nothing less than a restaurant one.

Ingredients:
- paneer - 200 grams
- onion - large 1
- tomato - medium 2
- green chillies - 3
- ginger - garlic - crushed - 1 tablespoon
- cashew nuts - 3 full or 6 halves
- kasoori methi - 1 teaspoon
- garam masala powder - 1 teaspoon
- turmeric powder - 1/2 teaspoon
- chilli powder 1 teaspoon
- coriander powder - 1 teaspoon
- coriander leaves - 2 twigs
- tomato ketchup - 1 tablespoon
- sugar - 1 teaspoon
- butter - 2 tablespoons
- fresh cream - 2 tablespoons
- salt as per taste
- water as required
Procedure:
- Heat some oil in a pan and add the chopped green chillies followed by crushed ginger-garlic.
- After few seconds add the cashews.
- Then add the onion. saute for few minutes. then add kasoori methi leaves and saute well.
- Later add the tomato and saute till the tomato becomes mushy.
- Add the coriander leaves, chilli powder, coriander powder, turmeric powder, salt, sugar and garam masala powder.
- Saute this well till everything comes together.
- Add half a cup of water and let it boil and simmer till it becomes thick.
- Once thick, remove from fire and let it cool.
- Once cooled, transfer it to a blender and make a paste of it.
- Now, in another pan, melt the butter.
- Then add the paste to this butter and add more water to bring it to your required consistency. i would add 2 more cups of water.
- Let it come to a boil. now add the tomato ketchup and give a stir.
- Add the paneer pieces now. check for salt.
- Let this be on stove for another 5 minutes and add the fresh cream to the masala before turning off the heat.
