Apple - Cucumber Salad. The Salad You Can't Stop Eating!
Sometimes we come across a recipe which is like you have never had anything of that kind before. Then suddenly you fall in love with that dish at the very first try.. this is one of that kind.

When this joins hands with juicy, flavourful and sweet apple... with a sweet, salty, slight acidity form apple cider vinegar, and awesome coriander touch.. this is very refreshing for any season and best for summer. I prefer to have it as 11 am snack.

Like any other salad, this recipe is simple and easy. just dump everything in a big bowl and toss in little salt and sugar with a couple of spoon of home-made apple cider vinegar.
With huge curiosity i made apple cider vinegar at home and was wondering when to use it. I tried making it at home just for the sake of feeling the satisfaction of witnessing the fermentation process of apple to awesome flavourful and organic apple cider vinegar (ACV). ACV in this salad definitely gives a fruity smell and vinegar-y punch to the salad. Vinegar in cooking is not new for the world but it is for me, as being an south Indian, i hardy use vinegar in my cooking. Just like seeing the idli batter fermenting and raising or the curd settling, seeing the apples fermenting for almost a month to end up in natural flavourful home made ACV, gives me an immense satisfaction. And the pulp we obtain during the process of ACV making is used for cleaning purpose. It removes the grease from utensils absolutely clean.
Ingredients:
- apples - 2
- cucumber - 1 big
- salt, sugar - 1/4 teaspoon
- apple cider vinegar - i tablespoon
- coriander leaves - finely chopped
- pepper - 1 pinch (optional)
Procedure:
- cut apples and cucumber to small pieces and transfer it to a big bowl.
- add the salt, sugar and pepper.
- add the apple cider vinegar to this. if you do not have ACV, you can very well add lemon juice. its equally good.
- give it a good stir and serve it.
