Vegetable Fried Rice
Fried rice - its such a simple rice dish, not too strong, yet flavourful. colourful for the eyes and satisfies the taste buds. if it is accompanied by some perfect side dish like any manchurian gravies.. it can satisfy your soul too !
i make fried rice with basic ingredients required for fired rice. i use just 2 sauces.
do not over saute the vegetables. keep it crunchy. that adds kick to the texture of the dish. this is one dish where my daughter never fishes out the vegetables. in our house we all prefer this fried rice with more vegetables.. hence lot of crunchiness.

Ingredients:
- basmathi rice - cooked - 2 cups
- vegetables - green beans, carrot, capsicum, capsicum, green part of spring onions - all finely chopped
- mushroom - thinly sliced
- garlic - 3
- white part of the spring onions
- soy sauce - 3 teaspoons
- green chilli sauce - 2 teaspoons
- salt as per taste
- white pepper powder - 1/2 teaspoon
- black pepper powder - 1/2 teaspoon
- sesame oil - 2 tablespoons
Procedure:
- cook the basmathi rice and keep it ready.
- heat the oil in a wok/kadhai.
- add the finely chopped garlic. let it turn light brown.
- add the finely cut thinly sliced mushrooms, white part of spring onions, carrot and green beans. (you can add cabbage too. since i did not have i did not add today)
- add little salt and saute on high.
- add the soy sauce and green chilli sauce. give a stir.
- saute for couple more minutes on high.
- add the finely chopped capsicum and the spring onions and toss.
- within few seconds, add the cooked rice and toss again.
- add the pepper powders and check salt.
- stir till the rice gets all the flavours from the sauces, vegetables and spices.
- serve hot with any indo-chinese gravy.
