Vengaya Kaara Chutney - Raw Onion Spicy Chutney for Ildi
This vengayam-kaara chutney - basically has 4 ingredients. This is my husband's favourite chutney. Here we use raw onion, red chillies and tamarind. Some of you might get scared hearing raw onion and red chillies.. but believe me.. you have to try this to actually believe it!
Yes, initially it does have strong raw onion flavour. That's why we add tamarind and chilli.
And tempering the chutney with lots of sesame oil and mustard seeds.. gives it an extra punch of flavour. So, practically, the raw smell of onion becomes very subtle with the tamarind, red chilli and sesame oil. This hot-spicy-tangy chutney recipe goes like this..

Ingredients:
- Big onions - 2 nos
- Red chillies - 5 (long ones)
- Tamarind - lemon size
- Rock salt
Tempering:
- Sesame oil - 3 tablespoons
- Mustard - 1 teaspoon
- Curry leaves - 2 sprigs
- Asafoetida - 2 pinches
Procedure:
- Chop the onions. Take them along with the red chillies, tamarind and salt in a mixer blender and grind it.
- No need to add extra water. The water from the onion itself is enough.
- Transfer this to a bowl.
- Heat 3 tablespoon sesame oil and do the tempering with the tempering ingredients. Pour it on the chutney.
- It might look like lot of oil, but just follow it once to taste it.
- This hot, spicy and tangy chutney is ready to sing a duet with idlis.
This chutney should be served with hot idlies. We prefer eating it with idlies than with dosai. May be you guys give it a try and let me how it goes with dosas.
