Egg Scramble / Egg Podimas
Egg podimas or the egg scramble is an all time favourite dish in our house. We make it as side dish for chapathi for dinner.. or an instant sidedish for rice and sambar. It makes an excellent sidedish for rasam rice on a tired day. We like it with more onions and sometimes even with bell peppers. It is also great to stuff in between bread for quick sandwich. Chapathi rolls made with this egg scramble makes a good lunch box item for kids.

This time, we bought "Farm Made" eggs which was neatly packed from our local grocery store "Saravana Supermarket" in Aminjikarai.
I made egg scramble/egg podimas as sidedish for chapathi for breakfast. I know this sounds little odd for breakfast. Yes.. this is the first time we too are having this combination for breakfast.
Lets jump to the recipe..
Ingredients:
- Eggs - 6 Nos
- onion - 4 (medium size)
- green chillies - 3
- garlic - 5 pods
- curry leaves (finely chopped)
- chilli powder - 1/2 teaspoon
- turmeric powder - 1/4 teaspoon
- water - 2 tablespoon
- salt - to taste
Procedure:
- Chop onions, green chillies, garlic and curry leaves finely.
- Heat oil in a pan. Add the chopped onion, garlic, green chillies and curry leaves and saute. Add a pinch of salt to enhance quick sauteing. Simultaneously get ready with the eggs as follows.
- Take a bowl, add 2 tablespoon water and add the chilli powder, turmeric powder and salt. Mix well to make sure the salt is well dissolved. Now break the eggs into this bowl. Hold! do not beat the eggs right now.
- Once the onions are well sauteed, now beat the eggs (with the dry ingredients) and add.
- Stir occasionally. Cook till the egg becomes cooked and not still wet.
I never use coriander leaves as I think it over powers the egg and caramelised onion flavour.
