Green Mango Rice - Use the Season



Another rice variety for the season - raw mango rice - if not now, then when. It is my daughter who keeps asking me to make the mango rice. But i do just once a season. I find boring to grate the mango. So I start to do the rice on one deal with my daughter.
She should help me with grating the mango. She being a big kid now and very desperate for the mango rice, will accept the deal. 




I am the person who believes that the kids should be brought to the kitchen and should know what work does a mother do and more over the child should know how her food is cooked. And the children should be more used to the works in their own house. This improves their hand eye coordination. This will also help them to be less nervous to handle practical classes. I would say that every person should know how his food is cooked. When a person knows how his food is cooked, he will see his food with more gratitude.



Today I made mango rice thokku and potato fry. Perfect lunch menu and good for lunch box.


Ingredients:

  • raw rice - 1 cup (cooked and spread on a plate and cooled to separate grains to mix with the paste)
  • raw mango - 1 medium size (not very sour) - Bangalore mango (Totapuri variety)
  • green chillies - 5 - 6
  • ginger - 1/2 inch piece
  • red chillies - 3
  • gram dhal - 2 tablespoons
  • urad dhal - 2 teaspoons
  • curry leaves - 2 sprig
  • turmeric powder - 1/2 teaspoon
  • mustard - 1 teaspoon
  • asafoetida - 3 pinches
  • oil - 4 tablespoon
  • salt -  as required

Procedure:

  • peel the mango and grate it in a grater.
  • heat oil in a pan or kadai.
  • add the mustard seeds, gram dhal, urad dhal, asafoetida, green chillies, turmeric powder and finely chopped ginger.
  • let all the ingredients fry and emanate its essence.
  • now add the grated raw mango and mix.
  • add salt and stir well.
  • keep sauteing this till oil separates from the thokku.
  • check salt. once the oil separates, the mango thokku is ready.
  • add a required amount of the mango thokku in rice and mix well. 
  • the tangy and spicy mango rice is ready to be served with you favourite side dish.

This simple and light mango rice is good with simple potato chips or fryums or any masala pappad.

Potato roast/masala or green plantain roast or brinjal drumstick fry also will be awesome for this mango rice.

You can store this mango thokku in fridge.

This combo is good for lunch box too.
