Flavourful Brinjal Gravy - Complements any Biryani

Spicy Brinjal Gravy - Flavoured with roasted sesame seeds and groundnut paste


It is a beautiful combination - biryani and the brinjal gravy. this particular brinjal gravy.. where brinjals are sauted with lots of sesame oil.. sourness from tamarind extract.. infused with roasted peanut and sesame seeds paste flavour.. cooked perfectly till that above mentioned "lots of" sesame oil floats on top of the gravy.. final touch with the dash of jaggery.

this gravy goes well with any type of biryani - Veg or Non veg biryani. It makes a good side for chapathi and dosai or idli too.
this brinjal gravy is easy to make and good to eat.

Let me tell you the recipe of this spicy and flavourful brinjal gravy for biryani.


Ingredients:

  • Brinjal (tender ones) - 10 nos.
  • whole black pepper - 1 teaspoon
  • curry leaves - 1 sprig
  • mustard - 1 teaspoon
  • sesame oil - 3 tablespoon
  • chilli powder - 1/2 teaspoon
  • coriander powder - 1/2 teaspoon
  • turmeric powder - 1/2 teaspoon
  • salt as per taste
  • tamarind extract - taken from one big lemon size tamarind.
  • peanut - 1 tablespoon
  • sesame seeds - 1 tablespoon
  • fenugreek seeds - 1/4 teaspoon
  • jaggery - 1 teaspoon

Procedure:

  • wash, make four slits on the brinjal and keep aside.
  • dry roast the peanuts, sesame seeds and fenugreek seeds and make a paste of it and keep ready.
  • heat the sesame oil and add the whole pepper corns, mustard and curry leaves.
  • once its done spluttering, add the brinjals.
  • let it saute for 10 minutes in medium heat.
  • then add the chilli powder, coriander powder, turmeric powder and salt.
  • stir it and let it cook for another 2 minutes
  • add the tamarind extract and let the brinjals cook in it for another 10 minutes.
  • now add the peanut and sesame seed paste to this and let it continue boiling in low heat.
  • wait till the oil separates from the gravy. 
  • finally add the jaggery and give a stir.
  • brinjal gravy is ready to be served.
