Murukku - Version 2

Murukku - With Fried Gram Flour

This is the another recipe for murukku with slightly different ingredients. Here i am using fried gram or pottu kadalai along with rice and urad dhal. Yes, its a little different. Doesn't need much fat to keep it less-hard.


The taste of this murukku reminds me of the murukku we used to buy and eat from small shops when we were kids.. 10 murukkus for 1 Rupee. Okay.. let me take you to the recipe quickly.

Ingredients for the murukku flour:

  • Flour rice / raw rice - 1 kg
  • Fried gram (pottu kadalai) - 1/4 kg
  • Urad dhal - 1/4 kg (roasted)
Dry roast the urad dhal alone. Cool it and take it along with the rice and fried gram and give it in the flour mill to grind it to flour. Murukku flour is ready.

Ingredients for making murukku:

  • Murukku flour - 2 cups
  • Sesame seeds or cumin seeds - 1 teaspoon
  • Ghee - 1 teaspoon
  • Salt - as required
  • Asafoetida - 1 pinch
  • Water -  to knead
  • Oil - to deep fry

Procedure:

  • Mix the flour, salt, asafoetida, cumin seeds (i prefer cumin seeds than sesame seeds for this recipe) and ghee. 
  • Add water little by little and knead it to a dough.
  • Take the murukku press and put the plate with the 3 holes in it.
  • Take some dough into the murukku press and keep ready
  • Heat the oil for deep frying.
  • Once the oil is hot, press murukkus on a greased ladle and transfer it gently to the hot oil.
  • Flip the murukku after a couple of minutes.
  • Wait till the effervescence stops. remove the murukkus from oil.
  • Yummy crunchy murukkus are ready to be munched.

Making murukku with flours:
You can also use home made rice flour, urad dhal flour and fried gram flour to make this murukku.

For urad flour, first dry roast the urad dhal to light brown. Then cool it. Once cooled grind it in the mixer and sieve it and use it.

For the fried gram flour, grind the fired gram in a mixer, sieve it and use it.

If you are using all store bought flours, then dry roast the rice flour and urad dhal flour alone before using. Sometimes you may not get the fried gram flour in shop.. no problem you can easily grind it in mixer (no need roasting) at home, sieve it and use.


The ratio of the flours and the other ingredients for making murukku will be:
  • Rice flour - 2 cups
  • Urad dhal flour - 1/2 cup
  • Fried gram flour - 1/2 cup
  • Sesame seeds - 1 teaspoon
  • Ghee - 1 and 1/2 teaspoon
  • Salt - as per taste
  • Asafortida - 2 pinches
  • Water - to knead
Add water to the above dry ingredients to make a dough. Make murukkus with murukku press and deep fry them. Murukkus ready.
